Parsnip Puree

Yep, that’s right PARSNIPS!  They might look funny but parsnips are yummy!  Parsnips are in the carrot family, so if your little one likes carrots give parsnips a try.  This is such an easy puree and I use the Beaba Babycook food maker.  If you don’t have this wonderful little machine you can simply steam the veggies and puree in a food processor or blender.  While you have some parsnips in the house let the rest of the family try them.  Roast them with some other veggies like carrots, potatoes and peppers.  Drizzle with olive oil and a sprinkle of salt, pepper and fresh rosemary.

Parsnip Puree

  • 2 Parsnips, peeled and chopped
  • 1 Sweet Potato, peeled and chopped
  • Water

Add the chopped veggies and water to the steamer basket of the Beaba (or a steamer basket in a pan with water).

Once the veggies are soft, puree until desired consistency is reached.  Make sure to use the liquid left over from the steamer – it is packed with nutrients from the veggies.

Serve to your little one!

Or pour into ice cube trays or freezer containers for up to 3 months.
